I love the simplicity of the ingredients in Rx Bars, so I have tried again and again to make a form of one that can be transportable. These are a little messy but thankfully these hold up for the person on the go. Other recipes I have tried are not likely to survive a few hours in the car without an ice block to keep them in shape. I’ve worked on this recipe on and off for awhile and I think I’ve got a good one going. Try this and let me know what you think!
Ingredients
3/4 Cup Unsweetened shredded coconut flakes, extra 1/2 cup for dusting
3/4 Cup raw cashews
3/4 Cup raw almonds
1/2 cup soaked chia
1 cup collagen protein (I used Vital Proteins)
2 tsp Raw cacao
1/4 tsp Pink Himalayan Sea Salt
3 pitted dates
A pinch of cinnamon (optional)
Preparation
Using a food processor add nuts and shredded coconut, then slowly add the rest of the ingredients until well-blended.
Put 1/2 shredded coconut a medium sized bowl.
Roll dough into balls and then roll around in the shredded coconut.
Lay on cookie sheet and put in the fridge or freezer for 30 minutes.
That’s it! Take wherever you go! Resist the drive through and pop one of these to help get you by until your next meal!
